- 6 quarts ripe peaches
- 4 cups granulated sugar
- 8 cups water
- Wash peaches and blanch in boiling water for 30-60 seconds. Plunge into ice water.
- Peel, halve, and pit the peaches.
- In a large pot, combine sugar and water. Bring to a boil, stirring until sugar dissolves. This creates your light syrup.
- Pack the prepared peach halves tightly into sterilized canning jars.
- Pour the hot syrup over the peaches, leaving about 1/2 inch of headspace at the top of each jar.
- Remove any air bubbles by sliding a non-metallic utensil around the inside of the jar.
- Wipe the jar rims clean and place the lids and rings on.
- Process the jars in a boiling water bath for 20 minutes (adjust time for altitudes above 1,000 feet).
- Let jars cool completely on a towel-lined counter. Check seals after 12-24 hours.
