3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup grated zucchini, squeezed dry
1/2 cup buttermilk or milk mixed with 1/2 teaspoon vinegar
1/2 cup hot water or hot brewed coffee
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
In a separate medium bowl, whisk the granulated sugar, brown sugar, eggs, oil, and vanilla extract until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Stir in the squeezed, grated zucchini.
Slowly mix in the buttermilk until incorporated.
Carefully stir in the hot water or coffee until the batter is smooth. The batter will be thin.
Pour the batter into the prepared loaf pan.
Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs attached.
Let the cake cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
Notes
Squeeze excess moisture from the grated zucchini using paper towels or a clean kitchen cloth before adding it to the batter. This prevents a dense cake.
Using hot coffee instead of hot water deepens the chocolate flavor without making the cake taste like coffee.
If you prefer a glaze, mix 1 cup powdered sugar with 2 tablespoons melted butter and 1 teaspoon vanilla extract, adding milk one teaspoon at a time until you reach a drizzling consistency.
