- 1 cup all-purpose flour
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/4 cup Greek yogurt
- 1/4 cup milk
- 1 large egg
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
- In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the applesauce, Greek yogurt, milk, egg, honey or maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

- For extra moisture, you can add 1 tablespoon of melted butter or coconut oil to the wet ingredients.
