Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg.
  3. In a separate medium bowl, whisk together the eggs and sugar until well combined.
  4. Add the vegetable oil, milk, and vanilla extract to the egg mixture and whisk until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the shredded zucchini.
