  • 1/4 teaspoon cream of tartar
  • 4 tablespoons cream cheese, softened
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites with cream of tartar and salt until stiff peaks form.
  3. In a separate bowl, beat the egg yolks with the softened cream cheese until smooth and well combined.
  4. Gently fold about one-third of the beaten egg whites into the yolk mixture to lighten it.
  5. Carefully fold the remaining egg whites into the yolk mixture until just combined. Be careful not to overmix and deflate the egg whites.
  6. Spoon mounds of the batter onto the prepared baking sheet, forming rounds about 3-4 inches in diameter. You should get about 8-10 rounds.
  7. Bake for 20-25 minutes, or until golden brown and firm to the touch.
  8. Let the cloud bread cool completely on the baking sheet before serving.

  • Ensure your egg whites are completely free of any yolk to achieve the best volume.
  • For a slightly sweeter cloud bread, you can add a teaspoon of your preferred sweetener to the yolk mixture.
