  • 1 tablespoon milk or cream (for glaze, optional)
  • 1/4 teaspoon chai spice blend (for glaze, optional)

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, cardamom, ginger, cloves, and shredded coconut.
  2. In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  4. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 350°F (175°C). Use a thermometer to monitor the temperature.
  5. Carefully drop rounded teaspoons of batter into the hot oil, working in small batches to avoid crowding the pot.
  6. Fry for 1 to 2 minutes per side, turning them gently with a slotted spoon until they are golden brown all over.
  7. Remove the donut holes with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  8. If glazing, whisk together the powdered sugar, milk or cream, and chai spice blend until smooth. Drizzle or dip the warm donut holes into the glaze.
