1 lb large shrimp, peeled and deveined
1 large egg
1 tablespoon water
1/2 cup all-purpose flour
1 cup Panko breadcrumbs
1/2 cup sweetened shredded coconut
1/4 teaspoon salt
1/4 teaspoon black pepper

For the Sauce:
1/2 cup sweet chili sauce
1 tablespoon rice vinegar
1 teaspoon lime juice
Instructions
Pat the shrimp very dry using paper towels. This step helps the coating stick and crisp up.
Set up a three-stage breading station. In the first shallow dish, whisk the egg and water together. In the second dish, mix the flour, salt, and pepper. In the third dish, combine the Panko breadcrumbs and shredded coconut.
Dredge each shrimp first in the flour mixture, shaking off excess. Dip it into the egg wash, letting excess drip off. Finally, press the shrimp firmly into the coconut-Panko mixture until fully coated.
Preheat your air fryer to 390°F (200°C). Lightly spray the air fryer basket with cooking spray.
Arrange the coated shrimp in a single layer in the air fryer basket, ensuring they do not touch. Spray the tops of the shrimp lightly with cooking spray.
Air fry for 8 to 10 minutes, flipping halfway through, until the shrimp are pink and the coating is golden brown and crispy.
While the shrimp cooks, prepare the sauce. Whisk together the sweet chili sauce, rice vinegar, and lime juice in a small bowl.
Serve the hot coconut shrimp immediately with the dipping sauce.
Notes
For extra crispiness, you can lightly spray the coated shrimp again just before placing them in the air fryer.
If you do not have sweetened coconut, use unsweetened coconut and add 1 teaspoon of sugar to the Panko mixture.
Do not overcrowd the air fryer basket; cook in batches if necessary to maintain crispness.
