Ingredients
Scale
1 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup powdered sugar (for frosting)
1/4 cup unsalted butter, softened (for frosting)
1 teaspoon vanilla extract (for frosting)
1-2 tablespoons milk (for frosting)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 12-inch round pizza pan or a 10-inch springform pan.
In a large bowl, cream together the 1 cup softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then mix in the 1 tablespoon of vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Stir in the chocolate chips.
Press the dough evenly into your prepared pan.
Bake for 20 to 25 minutes, or until the edges are golden brown and the center is set but still slightly soft.
Let the cookie cake cool completely in the pan on a wire rack before frosting.
To make the frosting, beat the 1/4 cup softened butter until smooth. Gradually add the powdered sugar, 1 teaspoon vanilla, and milk, beating until you reach a smooth, spreadable consistency. Add more milk if the frosting is too stiff.
Spread the buttercream frosting evenly over the cooled cookie cake. Decorate as desired.
Notes
For an extra gooey center, slightly underbake the cake by about 2 minutes.
You can press extra chocolate chips or M&Ms onto the top of the dough before baking for decoration.
If you do not have a 12-inch pan, you can use a 9×13 inch baking dish for a sheet pan cookie cake; increase the baking time slightly.
