1 large sweet onion
2 cups all-purpose flour
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1/2 cup milk
1 cup seasoned bread crumbs
1 cup all-purpose flour (for dredging)

Instructions
Prepare the onion: Cut off the top 1/2 inch of the onion. Place the onion cut-side down and cut about 3/4 of the way down into quarters, then cut each quarter in half, and each half in half again. You want 12-16 cuts.
Separate the petals: Gently spread the onion petals apart to open it up.
Prepare the dry ingredients: In a shallow dish, whisk together 2 cups flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Prepare the wet ingredients: In another shallow dish, whisk together eggs and milk.
Bread the onion: Dredge the onion in the seasoned flour mixture, ensuring all petals are coated. Shake off excess.
Dip in egg wash: Dip the floured onion into the egg wash, making sure to coat all surfaces.
Coat with breadcrumbs: Place the onion into the breadcrumb mixture, pressing gently to coat thoroughly. Ensure petals are well-coated.
Chill the onion: Place the breaded onion on a plate and chill in the refrigerator for at least 30 minutes.
Heat the oil: Pour vegetable oil into a deep fryer or heavy-bottomed pot to a depth of about 3 inches. Heat the oil to 350°F (175°C).
Fry the onion: Carefully place the chilled onion into the hot oil, cut-side down. Fry for 3-5 minutes, or until golden brown and cooked through.
Drain and serve: Carefully remove the onion from the oil and drain on paper towels. Serve immediately with your favorite dipping sauce.
