Ingredients

Scale
  • 2 lbs boneless, skinless chicken breast
  • 1 cup pickle juice
  • 1 large egg
  • 1 tablespoon milk
  • 1 1/2 cups all-purpose flour
  • 2/3 cup powdered sugar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying

Instructions

  1. Cut chicken into 1-inch pieces.
  2. Place chicken in a bowl and cover with pickle juice. Marinate for at least 4 hours or overnight in the refrigerator.
  3. In a separate bowl, whisk together the egg and milk.
  4. In a shallow dish, combine flour, powdered sugar, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  5. Remove chicken from pickle juice, shaking off excess liquid.
  6. Dip each chicken piece into the egg wash, then dredge in the flour mixture, ensuring each piece is fully coated.
  7. Heat about 2-3 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
  8. Fry the nuggets in batches for 3-4 minutes, or until golden brown and cooked through.
  9. Remove nuggets from oil and drain on a wire rack set over paper towels.
  10. Serve hot with your favorite dipping sauce.

Notes

  • For extra tender nuggets, you can pound the chicken slightly before cutting.
  • Adjust cayenne pepper for desired spice level.
  • Ensure oil temperature remains consistent for even cooking.
