Recreate Chipotle’s famous tender shredded beef barbacoa at home. This recipe delivers authentic flavor with adobo sauce, spices, and a slow cooking method, perfect for burrito bowls or tacos.

Ingredients

  • 3 pounds beef chuck roast
  • 1 cup water
  • 1/4 cup white vinegar
  • 2 tablespoons olive oil
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon adobo sauce from the can
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Pat the beef chuck roast dry.
  2. In a slow cooker, combine water, white vinegar, olive oil, minced chipotle pepper, adobo sauce, minced garlic, oregano, cumin, salt, and pepper.
  3. Place the beef roast in the slow cooker.
  4. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is very tender and shreds easily.
  5. Remove the beef from the slow cooker and shred it with two forks.
  6. Return the shredded beef to the slow cooker and mix it with the cooking liquid.
  7. Serve warm.

Notes

  • For a spicier barbacoa, add an extra chipotle pepper or more adobo sauce.
  • You can also cook this in a Dutch oven in the oven at 300°F (150°C) for 3-4 hours, or until tender.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
