1 cup warm milk (105-115F)
1/4 cup unsalted butter, melted
1/4 cup granulated sugar
1 teaspoon active dry yeast
1 large egg, room temperature
1 teaspoon vanilla extract
1 teaspoon salt
3 1/2 cups all-purpose flour, plus more for dusting
1/2 cup unsalted butter, softened
1 cup packed brown sugar
2 tablespoons ground cinnamon
For the Cream Cheese Frosting:
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons milk
Instructions
In a large bowl, combine warm milk, melted butter, and granulated sugar. Sprinkle yeast over the mixture and let it sit for 5-10 minutes until foamy.
Whisk in the egg and vanilla extract.
Add salt and 3 cups of flour. Mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic, adding more flour as needed.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Punch down the dough and roll it out into a 12×18 inch rectangle on a lightly floured surface.
Spread the softened butter evenly over the dough, leaving a small border.
In a separate bowl, combine brown sugar and cinnamon. Sprinkle this mixture evenly over the buttered dough.
Starting from one of the long sides, tightly roll up the dough. Pinch the seam to seal.
Cut the roll into 12 equal pieces.
Place the cinnamon rolls in a greased 9×13 inch baking dish, cut-side up.
Cover the dish and let the rolls rise for another 30-45 minutes.
Preheat your oven to 375F (190C).
Bake for 20-25 minutes, or until golden brown.
While the rolls are baking, prepare the frosting: Beat together softened cream cheese and butter until smooth.
Gradually beat in powdered sugar and vanilla extract. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
Spread the frosting over the warm cinnamon rolls.

Ensure your milk is warm but not hot to activate the yeast properly.
Using room temperature ingredients for the dough and frosting will help them incorporate smoothly.
For extra gooeyness, you can add a sprinkle of extra brown sugar and cinnamon on top before baking.
