  • 2 tablespoons butter
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (about 1 lb)
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in broccoli florets and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until broccoli is tender.
  4. Carefully transfer about half of the soup to a blender and blend until smooth. Alternatively, use an immersion blender directly in the pot and blend until desired consistency is reached. Return blended soup to the pot if using a regular blender.
  5. Stir in half-and-half, salt, pepper, and nutmeg. Heat gently without boiling.
  6. Gradually stir in cheddar cheese and Monterey Jack cheese until melted and smooth.
  7. Serve hot.

Notes

  • For a thicker soup, use less broth or simmer uncovered for a few extra minutes.
