  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
  3. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking soda.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness.
  8. Use a cookie cutter to cut out shapes, or a knife to cut into squares or rectangles.
  9. Place the cookies on the prepared baking sheets, about 1 inch apart.
  10. Bake for 8-10 minutes, or until the edges are set.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. Melt the chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  13. Dip each cooled cookie halfway into the melted chocolate, or drizzle the chocolate over the cookies.
  14. Place the chocolate-coated cookies back on the wire rack to allow the chocolate to set.

Notes

  • For thinner cookies, roll the dough out a bit thinner.
  • Adjust the peppermint extract to your preference for a stronger or milder mint flavor.
  • You can also use dark chocolate or milk chocolate for dipping.
