- 6 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped spinach
- 2 tablespoons chopped chives
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Preheat your oven to 350°F (175°C). Grease a 12-cup standard muffin tin well.
- Place the cottage cheese in a blender or food processor. Blend until completely smooth, about 30 seconds. This makes the bites fluffy.
- Add the eggs, salt, and pepper to the blender. Blend until just combined. Do not overmix.
- Stir in the shredded cheddar cheese, spinach, and chives by hand in a bowl.
- Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
- Bake for 18 to 22 minutes, or until the centers are set and a toothpick inserted comes out clean.
- Let the bites cool in the tin for 5 minutes before removing them.
