Make a creamy, high-protein frozen dessert quickly using only four simple ingredients. This no-churn recipe is a healthy alternative to traditional ice cream.

  • 16 oz full-fat cottage cheese
  • 1/4 cup sweetener (e.g., maple syrup or erythritol)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon xanthan gum (optional, for extra creaminess)

Instructions

  1. Place the cottage cheese, sweetener, and vanilla extract into a high-speed blender or food processor.
  2. Blend the mixture until it is completely smooth and creamy, stopping to scrape down the sides as needed. This may take 2 to 3 minutes.
  3. If using, add the xanthan gum and blend for another 30 seconds until fully incorporated.
  4. Pour the mixture into a freezer-safe container, such as a loaf pan or airtight container.
  5. Cover the container tightly with a lid or plastic wrap.
  6. Freeze for at least 6 hours, or until firm.
  7. Before serving, let the ice cream sit on the counter for 5 to 10 minutes to soften slightly for easier scooping.

Notes

  • For a chocolate version, add 2 tablespoons of unsweetened cocoa powder during blending.
  • To make this recipe compatible with a Ninja Creami, freeze the mixture in a pint container first, then process according to your machine’s instructions.
  • If you prefer a thicker texture without xanthan gum, freeze the mixture for 2 hours, stir well, and then return to the freezer.
