  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy Corn Muffin Mix
  • Ingredients to prepare Jiffy mix (usually milk and eggs, check box instructions)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the rinsed black beans, drained corn, Rotel tomatoes (with liquid), chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Cook for 5 minutes, stirring occasionally.
  4. Spread the beef mixture evenly into the bottom of your prepared baking dish. Sprinkle the shredded cheddar cheese over the top of the meat layer.
  5. Prepare the Jiffy Corn Muffin Mix according to the package directions. This usually involves mixing the dry mix with milk and eggs.
  6. Pour the cornbread batter evenly over the cheese and meat mixture in the baking dish.
  7. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the Cowboy Cornbread Casserole cool for 5 to 10 minutes before you cut and serve it.

  • For extra flavor in the meat layer, add 1/2 teaspoon of garlic powder with the other spices.
