2 lbs boneless, skinless chicken breasts
1 cup fresh or frozen cranberries
1/2 cup chicken broth
1/4 cup orange juice
2 tablespoons brown sugar
1 tablespoon cornstarch
1 teaspoon dried thyme
Salt and black pepper to taste
Instructions
Season the chicken breasts generously with salt, pepper, and dried thyme.
In a large skillet over medium-high heat, cook the chicken until golden brown on both sides and cooked through. Remove chicken and set aside.
In the same skillet, whisk together the chicken broth, orange juice, and brown sugar. Bring the mixture to a simmer.
In a small bowl, dissolve the cornstarch in 2 tablespoons of cold water to create a slurry.
Pour the slurry into the simmering sauce, stirring constantly until the sauce thickens slightly.
Add the cranberries to the sauce. Cook for 3-5 minutes until the cranberries begin to soften and burst.
Return the cooked chicken to the skillet. Spoon the cranberry sauce over the chicken.
Heat through for 2 minutes before serving.
Notes
For an extra bright flavor, use fresh orange zest with the juice.
