Bake a moist and flavorful loaf bread featuring the bright taste of orange zest and juice combined with tart cranberries.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup plain yogurt or sour cream
  • 1/4 cup fresh orange juice
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cranberries, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the yogurt (or sour cream), orange juice, orange zest, and vanilla extract until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  7. Gently fold in the chopped cranberries.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For a moister crumb, use sour cream instead of plain yogurt.
  • If using frozen cranberries, do not thaw them first; toss them with one tablespoon of the flour mixture before folding them into the batter to prevent sinking.
  • For a sweet finish, mix 1 cup powdered sugar with 2 tablespoons orange juice and drizzle over the cooled loaf.
  • Add 1/2 cup chopped walnuts or pecans with the cranberries for added crunch.
