- 1/2 cup shelled pistachios, roughly chopped
- 1/4 cup dried cranberries
- 1/4 cup pumpkin seeds
- 2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Preheat your oven to 325°F (160°C). Line a small baking sheet with parchment paper.
- In a bowl, combine the rolled oats, chopped pistachios, dried cranberries, and pumpkin seeds.
