1 cup all-purpose flour
1 cup granulated sugar, divided
1/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
3 large eggs
1 1/2 cups milk
1 teaspoon vanilla extract
2 medium apples, peeled, cored, and thinly sliced
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Instructions
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a 9-inch pie plate.
In a medium bowl, whisk together the flour, 1/2 cup of the sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Press the crumb mixture evenly into the bottom of the prepared pie plate to form the crust layer.
In a separate bowl, whisk the eggs, remaining 1/2 cup of sugar, milk, and vanilla extract until well combined. This is your custard mixture.
Arrange the sliced apples evenly over the crust layer in the pie plate. Sprinkle the apples with cinnamon and nutmeg.
Slowly and carefully pour the custard mixture over the apples. The layers will seem mixed, but they separate during baking.
Bake for 50 to 60 minutes, or until the center is set and a knife inserted near the center comes out mostly clean. The top layer should be golden brown.
Remove the pie from the oven and let it cool completely on a wire rack, about 2 to 3 hours, before slicing. The layers will fully set as it cools.

Use firm apples like Granny Smith or Honeycrisp for the best texture after baking.
Ensure the butter is very cold when making the crust mixture for proper separation.
Allow the pie to cool fully; slicing it warm will result in a runny texture.
