  • 2 lbs Butternut Squash, peeled and cubed
  • 1 lb Pasta (like rigatoni or penne)
  • 1/2 cup Heavy Cream (or full-fat coconut milk for dairy-free)
  • 1/4 cup Reserved Pasta Water
  • 1/4 cup Grated Parmesan cheese (plus more for serving)
  • 2 tablespoons Olive Oil
  • 1 small Yellow Onion, chopped
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Ground Nutmeg
  • 1 teaspoon Fresh Sage, chopped
  • Salt and Black Pepper to taste

Instructions

  1. Roast the butternut squash: Toss squash cubes with 1 tablespoon of olive oil, salt, and pepper. Roast at 400°F (200°C) for 25-30 minutes until tender.
  2. Cook the pasta according to package directions. Before draining, reserve about 1 cup of the starchy cooking water.
  3. While the pasta cooks, prepare the sauce base: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the onion until soft, about 5 minutes. Add garlic and sage; cook for 1 minute until fragrant.
  4. Create the puree: Transfer the roasted squash to a blender or food processor. Add the sautéed onion/garlic mixture, heavy cream, nutmeg, and a pinch of salt and pepper. Blend until completely smooth and creamy.
  5. Combine: Pour the squash puree into the skillet. Stir well. Add 1/4 cup of the reserved pasta water to thin the sauce to your desired consistency.
  6. Toss the pasta: Add the drained pasta and the Parmesan cheese to the skillet. Toss everything together until the pasta is fully coated in the rich sauce. Add more pasta water if the sauce seems too thick.
  7. Serve immediately with extra Parmesan cheese.

Notes

  • For an easy roasting shortcut, you can use pre-cut or frozen butternut squash cubes.
  • If you want a sausage variation, brown 1/2 lb of Italian sausage before sautéing the onions and set it aside, adding it back in step 5.
  • If you prefer a richer flavor, use fresh sage; dried sage works in a pinch, reducing the amount to 1/4 teaspoon.
