1 pound fettuccine pasta
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
1 large onion, chopped
2 bell peppers (any color), chopped
4 cloves garlic, minced
1 teaspoon Cajun seasoning
1/2 teaspoon cayenne pepper (or more, to taste)
1 (14.5 ounce) can diced tomatoes, undrained
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
Cook fettuccine according to package directions. Drain, reserving about 1 cup of pasta water.
While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
Add onion and bell peppers to the same skillet. Cook until softened, about 5-7 minutes.
Add garlic, Cajun seasoning, and cayenne pepper. Cook for 1 minute until fragrant.
Stir in diced tomatoes and heavy cream. Bring to a simmer and cook for 5 minutes, stirring occasionally, until sauce has slightly thickened.
Reduce heat to low. Stir in Parmesan cheese until melted and smooth.
Add cooked shrimp and fettuccine to the skillet. Toss to coat evenly with the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Stir in fresh parsley. Season with salt and black pepper to taste.
Serve immediately.
Notes
Adjust cayenne pepper to your desired level of spice.
You can add other vegetables like mushrooms or spinach.
For a milder version, reduce or omit the cayenne pepper.
