12 oz pasta (fettuccine or linguine recommended)
1 tbsp olive oil
2 tbsp butter
1 lb cremini mushrooms, sliced
6 cloves garlic, minced
1/2 tsp dried thyme
1/4 tsp black pepper
1/4 tsp salt
1 cup vegetable broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
Instructions
Cook pasta according to package directions. Reserve 1/2 cup of the starchy pasta water before draining. Set pasta aside.
Heat olive oil and butter in a large skillet over medium heat.
Add sliced mushrooms to the skillet. Cook for 6 to 8 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.
Add minced garlic, thyme, salt, and pepper to the skillet. Cook for 1 minute until the garlic is fragrant. Do not let the garlic burn.
Pour in the vegetable broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
Reduce the heat to low. Stir in the heavy cream and let it warm through for 2 minutes.
Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.
Add the drained pasta to the skillet with the sauce. Toss everything together until the pasta is fully coated.
Serve immediately, garnished with fresh parsley.
Notes
For a deeper mushroom flavor, use dried porcini mushrooms soaked in hot water (use the strained soaking liquid instead of some of the broth).
If you prefer a tangier sauce, substitute 2 tablespoons of cream cheese for a portion of the heavy cream.
