1 pound pasta (fettuccine or penne)
1 tablespoon olive oil
1 pound fresh mushrooms (cremini or white button), sliced
Cook pasta according to package directions. Reserve about 1 cup of the starchy pasta water before draining. Set pasta aside.
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced mushrooms and cook until they release their liquid and begin to brown, about 6 to 8 minutes.
Add the minced garlic, thyme, salt, and pepper to the skillet. Cook for 1 minute until the garlic is fragrant.
Pour in the heavy cream and broth. Bring the mixture to a gentle simmer, stirring occasionally. Let it cook for 3 minutes to slightly thicken.
Stir in the grated Parmesan cheese until the sauce is smooth.
Add the fresh spinach to the sauce and stir until it wilts completely, about 1 to 2 minutes.
Add the cooked and drained pasta to the skillet. Toss everything together to coat the pasta in the sauce.
If the sauce seems too thick, add the reserved pasta water, 1/4 cup at a time, until you reach your desired consistency.
Serve immediately, garnished with fresh parsley.
