3 cloves garlic, minced
1/2 teaspoon dried thyme
1/4 cup dry white wine or chicken broth
1 cup heavy cream
1/2 cup vegetable or chicken broth
1 teaspoon Dijon mustard
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped

Instructions
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the sliced mushrooms and cook without stirring for 3 to 4 minutes until they start to brown. Stir and continue cooking until all the liquid evaporates and the mushrooms are deeply browned, about 5 to 7 minutes total.
Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
Pour in the white wine or broth to deglaze the pan, scraping up any browned bits from the bottom. Let the liquid reduce by half.
Stir in the heavy cream, vegetable broth, and Dijon mustard. Bring the mixture to a gentle simmer.
Reduce the heat to low and let the sauce simmer for 5 minutes, allowing it to thicken slightly.
Remove the skillet from the heat. Stir in the Parmesan cheese until melted and smooth.
