A simple recipe for classic Pizza Bianca using a creamy garlic and ricotta base instead of tomato sauce.

  • 1 pound pizza dough
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded low-moisture mozzarella cheese
  • 1/4 cup water
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions

  1. Preheat your oven and pizza stone or baking sheet to 475 degrees Fahrenheit.
  2. Stretch or roll your pizza dough to your desired thickness and place it on a lightly floured pizza peel or parchment paper.
  3. In a small bowl, mix the ricotta cheese, minced garlic, Parmesan cheese, water, oregano, pepper, and salt until combined. This is your white sauce.
  4. Spread the ricotta mixture evenly over the pizza dough, leaving a one-inch border for the crust.
  5. Sprinkle the mozzarella cheese over the ricotta base.
  6. Brush the exposed crust lightly with olive oil.
  7. Carefully transfer the pizza to the preheated stone or baking sheet.
  8. Bake for 10 to 14 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.

Notes

  • For a crispier crust, place your pizza stone in the oven while it preheats for at least 30 minutes.
  • You can add sautéed mushrooms or spinach on top of the cheese layer before baking for extra flavor.
  • Use fresh garlic for the best taste in the sauce.
