1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar (for crust)
6 tablespoons unsalted butter, melted
1 (14 ounce) can sweetened condensed milk
1/2 cup fresh key lime juice (about 8-10 limes)
2 large egg yolks
1 teaspoon lime zest
Optional: Whipped cream and extra lime zest for topping
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
Prepare the crust: In a medium bowl, combine the graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and mix until the crumbs are evenly moistened.
Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan.
Bake the crust for 10 minutes. Remove from the oven and let it cool slightly while you prepare the filling.
Prepare the filling: In a separate bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
Pour the lime filling evenly over the warm crust.
Bake for 15 to 18 minutes, or until the edges are set but the center still has a slight jiggle. Do not overbake.
Let the bars cool completely on a wire rack at room temperature.
Chill the bars in the refrigerator for at least 4 hours, or preferably overnight, before slicing.
Once chilled, use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares.
Top with whipped cream and extra lime zest before serving, if desired.
Notes
Use fresh key lime juice for the best flavor; bottled juice changes the texture and taste.
For a firmer bar, chill the filling for at least 6 hours.
If you do not have key limes, you can substitute with regular limes, but you may need slightly less juice.
