Make this hearty, one-pot meal featuring tender chicken breasts smothered in a rich, creamy sauce served over fluffy white rice.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 medium yellow onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1 cup cooked white rice, for serving

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, paprika, and thyme.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden brown. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the chopped onion and sliced mushrooms to the skillet. Cook until the onions are soft and the mushrooms have released their liquid, about 5 to 7 minutes.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste.
  6. Slowly whisk in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer.
  7. Stir in the heavy cream and the cubed cream cheese until the cheese melts and the sauce thickens slightly.
  8. Return the seared chicken breasts to the skillet. Reduce the heat to low, cover the skillet, and simmer for 10 to 15 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and is tender.
  9. Serve one smothered chicken breast over 1/4 cup of cooked white rice. Spoon extra sauce over the top.

Notes

  • For extra flavor, you can brown the chicken thighs instead of breasts. Adjust cooking time as needed.
  • If you prefer a thicker sauce, allow it to simmer uncovered for a few extra minutes before adding the chicken back in.
  • Use your favorite type of rice, such as basmati or jasmine, prepared according to package directions.
