Make this easy cheesy rice recipe on the stovetop in under 30 minutes. It is a creamy, comforting side dish perfect for weeknight dinners.

  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the uncooked rice and garlic powder. Stir and cook for 1 minute until the rice is lightly coated.
  3. Pour in the chicken broth and milk. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 to 20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  5. Remove the saucepan from the heat. Let it stand, covered, for 5 minutes.
  6. Uncover the rice. Stir in the shredded cheddar cheese, grated Parmesan cheese, salt, and pepper until the cheese is fully melted and the rice is creamy.
  7. Serve your cheesy rice immediately as a side dish for chicken or steak.

Notes

  • For extra creaminess, substitute 1/4 cup of the milk with 2 ounces of cream cheese, adding it in the final step with the shredded cheese.
  • You can use pre-cooked rice to speed up the process; skip steps 1 through 4 and proceed directly to step 5, heating the pre-cooked rice with the broth/milk mixture until hot before adding the cheese.
  • This simple cheesy rice pairs well with roasted vegetables or grilled protein.
