1 pound pasta (like fettuccine or penne)
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 cans (5 ounces each) tuna in water, drained
1 ½ cups milk
½ cup heavy cream
½ cup grated Parmesan cheese
¼ cup chopped fresh parsley
Salt and black pepper to taste
Instructions
Cook pasta according to package directions. Drain, reserving about ½ cup of pasta water.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Stir in drained tuna, breaking it up with a spoon.
Pour in milk and heavy cream. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
Stir in Parmesan cheese and parsley. Season with salt and pepper.
Add cooked pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
Serve immediately.
Notes
For an extra creamy texture, you can add a tablespoon of butter to the sauce.
Feel free to add other vegetables like peas or chopped bell peppers along with the onion.
