This Creamy Tuscan Chicken Skillet recipe brings rich Italian flavors right to your table with minimal fuss. You will create tender, perfectly cooked chicken bathed in a luscious, sun-dried tomato and spinach cream sauce. It’s a restaurant-quality meal you can make quickly tonight.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, sliced in half horizontally
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil for garnish (optional)

Instructions

  1. Season the chicken cutlets lightly with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. Reduce heat to medium. Add the minced garlic and sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the heavy cream, Italian seasoning, Parmesan cheese, salt, and pepper. Whisk until the sauce is smooth.
  7. Add the fresh spinach to the sauce. Stir until the spinach wilts down, about 2 minutes.
  8. Return the cooked chicken to the skillet, nestling it into the sauce.
  9. Simmer for 2-3 minutes to reheat the chicken and allow the flavors to meld.
  10. Serve immediately, garnished with fresh basil if desired.

Notes

  • For an extra layer of flavor, marinate the chicken in a little olive oil and dried herbs before cooking.
  • If you prefer a thicker sauce, let the cream simmer uncovered for a few extra minutes before adding the spinach.
  • This dish pairs wonderfully with pasta, crusty bread, or roasted potatoes.
