  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
  • 1 tsp dried Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 3-5 minutes.
  4. Stir in minced garlic, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  6. Reduce heat to low and stir in grated Parmesan cheese until melted and the sauce is smooth.
  7. Return the browned chicken to the skillet.
  8. Add fresh spinach and stir until wilted, about 1-2 minutes.
  9. Season with additional salt and pepper to taste.
  10. Serve hot.
