1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
8 ounces lasagna noodles, broken into small pieces
1 (15 ounce) can diced tomatoes and their juice (undrained)
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
1 cup heavy cream
8 ounces cream cheese, cubed
1/2 cup grated Parmesan cheese, plus more for topping
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
Fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
Add onion to the pot and cook until softened, about 4 minutes. Add garlic and cook for 1 minute more until fragrant.
Pour in chicken broth, add broken lasagna noodles, diced tomatoes, basil, oregano, salt, and pepper. Bring the mixture to a boil.
Reduce heat and simmer, stirring occasionally, until noodles are tender, about 10-12 minutes.
Reduce heat to low. Stir in heavy cream, cubed cream cheese, and Parmesan cheese until smooth and melted.
Return the cooked chicken to the pot. Stir in the ricotta and mozzarella cheeses until just melted and creamy. Do not boil after adding cheese.
Taste and adjust seasonings if needed. Serve immediately topped with extra Parmesan and fresh parsley.
Notes
For a quicker prep, use pre-cooked rotisserie chicken. Shred it and add it back in with the cream and cheeses.
If you prefer a thicker soup, let it sit off the heat for 10 minutes before serving; the noodles will absorb more liquid.
Use quality chicken broth for the best flavor foundation.
