2 ripe but firm avocados
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 large egg, beaten
3/4 cup panko breadcrumbs

Instructions
Cut the avocados in half, remove the pits, and peel them. Cut each half into wedges, about 1/2 inch thick.
In a shallow bowl, whisk together the flour, salt, pepper, garlic powder, and paprika.
In another shallow bowl, place the beaten egg.
In a third shallow bowl, place the panko breadcrumbs.
Dredge each avocado wedge first in the flour mixture, shaking off any excess.
Dip the floured wedge into the beaten egg, ensuring it’s fully coated.
Finally, coat the wedge with panko breadcrumbs, pressing gently to help them adhere.
Arrange the breaded avocado fries in a single layer in your air fryer basket. Do not overcrowd. You may need to cook in batches.
Lightly spray the avocado fries with cooking spray.
Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
Notes
Use avocados that are ripe but still firm to the touch so they hold their shape.
For an extra kick, you can add a pinch of cayenne pepper to the flour mixture.
Serve with a creamy dipping sauce like sriracha mayo or a cool ranch.
