  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 8 small (8-inch) flour tortillas
  • Cooking spray (or light oil)

Instructions

  1. Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
  2. Stir in the taco seasoning and water. Simmer for 5 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat and let cool slightly.
  3. Stir the shredded cheese into the seasoned beef mixture.
  4. Lay a tortilla flat. Place about 1/4 cup of the beef and cheese mixture just below the center.
  5. Fold the sides of the tortilla inward over the filling. Roll the tortilla up tightly from the bottom, like a burrito. Secure the seam with a toothpick if necessary. Repeat with remaining filling and tortillas.
  6. Lightly spray the rolled chimichangas all over with cooking spray or brush with oil.
  7. Place the chimichangas in the air fryer basket in a single layer, ensuring they do not touch. Work in batches if needed.
  8. Air fry at 375°F (190°C) for 8 to 10 minutes, flipping halfway through, until they are golden brown and crispy.
  9. Carefully remove toothpicks before serving hot with your favorite toppings like salsa and guacamole.
