Make exceptionally crispy buffalo cauliflower wings in your air fryer. This recipe focuses on a dry coating method to achieve a crunchy texture without sogginess.

  • 1 large head cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup cold water
  • 1/2 cup buffalo hot sauce
  • 4 tablespoons unsalted butter or vegan butter substitute
  • 2 tablespoons apple cider vinegar
  • Cooking spray (oil-based)

Instructions

  1. In a large bowl, whisk together the flour, garlic powder, onion powder, salt, pepper, and paprika.
  2. Add the cold water to the dry mixture and whisk until you have a thin, smooth batter. Do not overmix.
  3. Dip each cauliflower floret into the batter, allowing excess to drip off.
  4. Lightly spray the air fryer basket with cooking spray. Arrange the battered florets in a single layer in the air fryer basket, ensuring they do not touch. Work in batches if necessary.
  5. Air fry at 380°F (195°C) for 10 minutes.
  6. Flip the florets, spray lightly with cooking spray again, and continue to air fry at 400°F (200°C) for another 8 to 10 minutes, or until golden brown and very crispy.
  7. While the cauliflower finishes cooking, prepare the sauce: In a small saucepan over medium heat, melt the butter.
  8. Whisk in the buffalo hot sauce and apple cider vinegar. Heat until just simmering, then remove from heat.
  9. Place the hot, crispy cauliflower into a large bowl. Pour the buffalo sauce mixture over the cauliflower and toss gently until fully coated.
  10. Serve immediately with your choice of dip.

Notes

  • For extra crispiness, let the coated cauliflower rest on a wire rack for 10 minutes before air frying.
  • If you prefer a thicker sauce, simmer it for an extra 2 minutes to reduce slightly.
  • Serve with vegan ranch or blue cheese dressing for dipping.
