2 ripe avocados, firm but yielding
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, lightly beaten
For the Chipotle Dip:
1/2 cup mayonnaise
2 tablespoons adobo sauce from canned chipotle peppers
1 tablespoon lime juice
1 teaspoon smoked paprika
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the chipotle dip: In a small bowl, whisk together mayonnaise, adobo sauce, lime juice, and smoked paprika until well combined. Set aside.
Cut the avocados in half and remove the pits. Cut each half into wedges, about 1/2 inch thick.
Set up a dredging station with three shallow dishes. In the first dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. In the second dish, place the beaten eggs.
Dip each avocado wedge first into the beaten eggs, ensuring it’s fully coated, then press it into the panko mixture, coating all sides.
Place the coated avocado fries in a single layer on the prepared baking sheet.
Bake for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
Serve the crispy baked avocado fries immediately with the chipotle dip.

Ensure your avocados are ripe but still firm enough to hold their shape when cut.
For extra crispiness, you can toast the panko breadcrumbs lightly before coating the avocado.
Adjust the amount of adobo sauce in the dip to control the level of spice.
