Follow this simple oven baking method to get truly crispy baked chicken wings with a satisfying crunch, avoiding messy deep frying. This recipe delivers juicy insides and perfectly golden skin every time you bake.

Ingredients

Scale
  • 2 lbs chicken wings (flats and drumettes separated)
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil for easier cleanup. Place a wire cooling rack on top of the baking sheet.
  2. Pat the chicken wings completely dry using paper towels. Removing surface moisture is key to achieving that ultimate crunch.
  3. In a medium bowl, combine the baking powder, salt, garlic powder, paprika, black pepper, and cayenne pepper (if using). Mix the dry seasoning well.
  4. Add the dried chicken wings to the bowl. Toss them thoroughly until every piece is evenly coated with the seasoning mixture. The baking powder helps dry out the skin, making it crisp.
  5. Arrange the seasoned wings in a single layer on the wire rack set over the baking sheet. Make sure the wings are not touching each other to allow air circulation for even crisping.
  6. Bake for 20 minutes.
  7. Flip the chicken wings over.
  8. Continue baking for another 20 to 25 minutes, or until the wings are deeply golden brown and very crispy. For extra crispiness, you can switch the oven to broil for the last 1 to 2 minutes, watching closely to prevent burning.
  9. Remove the wings from the oven. Let them rest for 5 minutes before serving. Toss immediately with your favorite sauce, like homemade Buffalo sauce, or serve dry with dipping sauces.

Notes

  • Using baking powder is the secret ingredient for shatter-crisp skin without deep frying.
  • Ensure the wings are completely dry before seasoning; this step is crucial for crispiness.
  • For the best results, use a wire rack so air circulates completely around the wings, preventing a soggy bottom.
  • If you plan to sauce the wings, toss them right before serving so they stay crispy longer.
