Ingredients
Scale
2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon (the crispy secret!)
1 3/4 cups buttermilk
2 large eggs, separated
1/4 cup unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
Instructions
Preheat your waffle iron according to the manufacturer’s instructions.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
In a separate medium bowl, whisk together the buttermilk, egg yolks, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
In a clean, dry bowl, beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the waffle batter.
Lightly grease your waffle iron if needed. Pour about 1/2 cup of batter onto the hot waffle iron for each waffle.
Cook for 3-5 minutes, or until golden brown and crispy.
Serve immediately with your favorite toppings.
Notes
The cinnamon is the secret to extra crispiness and a subtle flavor boost.
Do not overmix the batter after adding the dry and wet ingredients.
Fold in the egg whites gently to keep the batter light and airy.
Serve hot for the best crispy texture.
