2 large eggs, separated
1 3/4 cups buttermilk
1/2 cup unsalted butter, melted

Instructions
Preheat your waffle iron according to the manufacturer’s instructions.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cornstarch.
In a separate medium bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
In a clean bowl, beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the waffle batter until just incorporated. This will make your waffles extra fluffy.
Lightly grease your waffle iron if necessary.
Pour the batter onto the preheated waffle iron, filling it to the recommended level for your iron.
Cook until the waffles are golden brown and crispy, about 3-5 minutes, depending on your waffle iron.
