Instructions

  1. Grate the potatoes using a box grater or food processor attachment. Work quickly to prevent browning.
  2. Place the grated potatoes in a clean kitchen towel or several layers of cheesecloth. Twist and squeeze very firmly over the sink to remove as much liquid as possible. This step is crucial for crispiness.
  3. Transfer the dry grated potato pulp to a medium bowl. Add the grated onion, egg, flour, salt, and pepper. Mix gently until just combined. Do not overmix.
  4. Heat about 1/2 inch of oil in a large, heavy-bottomed skillet over medium-high heat until shimmering (about 350°F).
  5. Working in batches, scoop about 1/4 cup of the potato mixture per pancake and drop it into the hot oil. Flatten slightly with the back of a spatula. Do not overcrowd the pan.
  6. Fry for 4 to 6 minutes per side until deeply golden brown and crisp.
  7. Remove the pancakes with a slotted spatula and place them on a wire rack set over a baking sheet to drain excess oil. Season lightly with extra salt immediately after removing from the oil.
