Make crispy zucchini fries using a simple breading of Parmesan and panko, baked or air-fried for a healthy snack.

  • 2 medium zucchini
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) or set your air fryer to 400°F (200°C). Lightly grease a baking sheet or line the air fryer basket.
  2. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into sticks about 1/4 to 1/2 inch thick.
  3. Set up a breading station with three shallow dishes. Place flour in the first dish. Whisk the egg in the second dish. In the third dish, combine panko, Parmesan cheese, garlic powder, salt, and pepper.
  4. Dredge each zucchini stick first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press it firmly into the panko mixture to coat completely.
  5. Arrange the coated zucchini sticks in a single layer on the prepared baking sheet or in the air fryer basket. Do not overcrowd.
  6. Bake for 15-20 minutes, flipping halfway through, until golden brown and crisp. If air frying, cook for 10-12 minutes, shaking the basket halfway through.
  7. Serve immediately with your favorite dipping sauce.

Notes

  • For a lower-carb or keto option, substitute almond flour for the all-purpose flour and use crushed pork rinds instead of panko breadcrumbs.
  • If you are making these for toddlers, cut the sticks slightly thicker for easier handling.
  • Serve with ranch dressing, marinara sauce, or a simple Greek yogurt dip.
