  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • Salt and freshly ground black pepper to taste
  • Olive oil for frying

Instructions

  1. In a large bowl, combine the grated zucchini, feta cheese, parsley, and mint.
  2. Add the beaten eggs, flour, baking powder, salt, and pepper. Mix until just combined.

  4. Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
  5. Fry for 3-4 minutes per side, until golden brown and crispy.
  6. Remove fritters from the skillet and drain on paper towels.
  7. Serve warm.
