Make a creamy sweet potato casserole easily in your slow cooker. This recipe features a pecan streusel topping and saves oven space.

Ingredients

  • 3 lbs sweet potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/2 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted, plus 2 tablespoons for topping
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup packed light brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup miniature marshmallows (optional)

Instructions

  1. Place the cubed sweet potatoes in the slow cooker. Cook on high for 3 to 4 hours or on low for 6 to 7 hours, until tender.
  2. Drain any excess liquid from the slow cooker.
  3. Add the milk, 1/2 cup melted butter, granulated sugar, eggs, vanilla extract, cinnamon, and salt to the sweet potatoes. Beat with an electric mixer until smooth and creamy.
  4. Spread the sweet potato mixture evenly in the bottom of the slow cooker insert.
  5. In a separate bowl, prepare the topping by mixing the flour, brown sugar, remaining 2 tablespoons of melted butter, and chopped pecans until crumbly.
  6. Sprinkle the streusel topping evenly over the sweet potato mixture.
  7. Cook on low for an additional 1 to 1.5 hours, until the topping is set.
  8. If using marshmallows, sprinkle them over the top during the last 15 minutes of cooking.
  9. Serve directly from the slow cooker.

Notes

  • You can prepare the sweet potato base the day before and store it in the refrigerator before adding the topping and cooking.
  • For a richer flavor, substitute half of the milk with heavy cream.
  • If you prefer a crispier topping, you can transfer the casserole to an oven-safe dish and bake at 350°F for 10 minutes after the slow cooking time.
