1 pound fresh or frozen pitted cherries
1/2 cup granulated sugar, plus 1 tablespoon for dusting
1/4 cup all-purpose flour
3 large eggs
1/2 cup whole milk
1/4 cup heavy cream
1 teaspoon vanilla extract
Pinch of salt
Butter for greasing the dish
Instructions
Preheat your oven to 375°F (190°C). Butter a 9-inch pie plate or gratin dish generously.
Scatter the cherries evenly over the bottom of the prepared dish. Sprinkle them with the 1 tablespoon of sugar.
In a medium bowl, whisk together the 1/2 cup of granulated sugar and the flour.
In a separate bowl, whisk the eggs until light. Gradually whisk in the milk, heavy cream, vanilla extract, and salt until just combined.
Slowly whisk the wet ingredients into the dry ingredients until the batter is smooth. Do not overmix.
Carefully pour the batter over the cherries in the baking dish.
Bake for 40 to 45 minutes, or until the clafoutis is puffed, golden brown, and a knife inserted near the center comes out clean. The center may still jiggle slightly.
Let the clafoutis cool slightly on a wire rack. Dust with additional powdered sugar before serving warm.
Notes
You can use kirsch or almond extract instead of vanilla for a different flavor profile.
If using frozen cherries, do not thaw them before baking.
The clafoutis will deflate as it cools; this is normal.
