  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely shredded zucchini, squeezed dry
  • 1/2 cup semi-sweet chocolate chips
  • For the Frosting:
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup unsweetened cocoa powder
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk the melted butter with the granulated sugar and brown sugar until combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Fold in the squeezed, shredded zucchini and the chocolate chips.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached.
  9. Let the brownies cool completely in the pan on a wire rack.
  10. To make the frosting, beat the softened butter in a bowl until creamy.
  11. Gradually add the cocoa powder and powdered sugar, alternating with the milk, beating until smooth. Stir in the vanilla extract.
  12. Once the brownies are completely cool, spread the frosting evenly over the top. Cut into squares.

Notes

  • Squeeze as much liquid as possible from the shredded zucchini using a clean kitchen towel or paper towels. This prevents a soggy brownie.
  • Do not overbake the brownies; slightly underbaking results in a fudgier texture.
  • For an extra chocolate punch, use dark cocoa powder in the brownie batter.
