1 ripe avocado, mashed well
1 cup unsweetened cocoa powder
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
In a medium bowl, combine the mashed avocado and sugar. Mix until smooth.
Add the eggs and vanilla extract to the avocado mixture. Beat until just combined.
Sift the cocoa powder over the wet ingredients. Gently fold the cocoa powder into the batter until no dry streaks remain. Do not overmix.
Pour the batter into the prepared pan and spread evenly.
Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan before lifting out and cutting into squares. Cooling helps achieve the fudgiest texture.
Notes
For an even richer flavor, use dark cocoa powder.
