Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the Brownie Layer: In a large bowl, whisk the melted butter with the granulated sugar and brown sugar until fully combined. Whisk in the eggs one at a time, then stir in the vanilla extract.
Sift the cocoa powder, flour, salt, and baking powder over the wet ingredients. Mix until just combined; do not overmix. Fold in 1 cup of chocolate chips.
Spread the brownie batter evenly into the prepared pan. Set aside.
Prepare the Cookie Layer: In a separate bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
In a small bowl, whisk together the flour, baking soda, and salt for the cookie layer. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Fold in the remaining 1 cup of chocolate chips.
Gently drop spoonfuls of the cookie dough over the brownie batter. Use your fingers or a spatula to carefully spread the cookie dough layer over the brownie batter, covering it completely.
Bake for 30 to 35 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist, fudgy crumbs attached, not wet batter.
Let the brookies cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Once cool, cut into bars.
Notes
For the fudgiest texture, slightly underbake the bars by a few minutes. The center will firm up as they cool.
Use high-quality Dutch-processed cocoa powder for a deeper, darker chocolate flavor.
Chill the bars for at least two hours before slicing for clean, defined cuts.
