- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 3 medium)
- 1/4 cup milk (dairy or non-dairy)
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
- In a separate medium bowl, whisk the applesauce, maple syrup, eggs, and vanilla extract until combined.
- Add the mashed bananas and milk to the wet ingredients and stir until just mixed.
- Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are fine.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a gluten-free option, substitute the whole wheat flour with a 1-to-1 gluten-free baking blend.
